Yes it’s that time of year again when everyone is thinking about taxes.  Last years taxes.  What you should be planning for is this years tax savings.  You need to know what will save you the most money, how to keep proper records and if it’s all legal.  Who has time to do all that research?

Here’s an update on my

Time Saving, Money Saving, Goldmine In The Kitchen Post from Feb 6th

A quick recap my husband said I shouldn’t go food shopping till we clear out what we already have. I agreed and thought it would be a great opportunity to save time, money and gas by Not going food shopping.

So far so good.  I have purchased milk, bread and some cheese etc.  I also needed to pick up a few items my son could eat after having spacers placed on this teeth for braces. I bought soft foods like apple sauce, pudding and drinkable yogurts for him.  Next my husband had a colonoscopy planned so that led me to purchase clear liquid items like jello, Gatorade and chicken broth. All are now doing well and beack to a normal diet.

 As you can see from the pictures our food supply is still pretty good.  While digging around to see what we have on hand I have found several items past their expiration date so into they trash they go. 

My Spring Cleaning will start in the kitchen.  I plan to get to one cabinet or drawer each day.

Important things to remember while saving money

•   always buy on sale in season and use a coupon to stock up

• Only buy what you can use before it expires

• deals too good to pass up can be given away or donated to food pantry

• rotate stock on your shelves, oldest up front

• eat less to save time, money and calories

No strange meals to report yet.  Looks like we will have plenty to get us through February.  I’ll keep you all posted on how the Spring Cleaning of the kitchen is going.

Spring Cleaning, Food Rotation, Super Savings Plan 

What you are looking at in the above pictures is my collection of Food.  Food that I have clipped coupons for, shopped sales for, brought home and stored. OK, I may have a problem passing up a good deal but by planning my purchases in this way I’m saving a lot of money.

The other day my husband said I should STOP buying till we eat all the food we have on hand.  What a concept.  At first I was insulted thinking he thought I wasn’t doing a good job of saving us money.  Then I took a good look at how much food we have on hand and thought maybe he was right.  I made sure to tell him I would still have to buy milk and eggs and things like that. I just can’t quite bargain shopping cold turkey, pardon the pun.

If you have been following my posts for some time, you know how I purchase several papers a week to collect a lot of coupons to buy in bulk when an item goes on sale.  While I take this time off I’m sure I’ll feel like I’m missing out on a lot of great deals but I do realize that the deals will come around again.  Throwing out expired food even if it was cheap is not a good deal.

With Spring approaching I’ll look at this as an opportunity to Spring clean the pantry.

Gas

Time

Food

Space

I’m sure the meals will get rather interesting as we run out of items.  I’ll keep you filled in on how it’s going and I’ll update my photos with hopefully empty shelves soon.  I wonder just how long it will take to eat our way-out of house and home. I may even throw in some meal plan ideas along the way.

Life is just a journey and this will be a mini vacation for me.

Quick and Easy Crock Pot Lasagna

2-3 lbs ground beef   browned and drained

4 lbs of Prego spaghetti sauce

16 oz cottage cheese

16 oz ricotta cheese

3 cups shredded mozzarella cheese divided

2 -12oz boxes Creamette MaFalda noodles mini lasagna noodles

Use a 6qt or larger crock pot

In the sauce pot with the browned and drained meat add all the Prego sauce and set aside

In a separate bowl add the cottage cheese, ricotta and 2 cups of mozzarella set aside

In the crock pot start layering 1/3 of meat sauce

1 box of uncooked noodles

1/2 of cheese mixture

repeat meat, noodles, cheese

finish with last third of meat sauce and last 1 cup of mozzarella on top

cover with lid

cook on high 3 hours

This also tasted great reheated the next day.

Crowd Pleasing Crock Pot Breakfast

2 bags (32oz) Ore-Ida Frozen Potatoes O’Brien

2 16oz packages of peppered bacon   chopped, cooked and drained

4 cups shredded cheddar cheese

2 dozen eggs

2 cups milk

Use a large 6 quart or larger crock pot

spray pot with cooking spray

layer 1/2 potatoes

2 cups of cheese

1/2 chopped cooked bacon

repeat layers again

beat eggs with milk pour over the layers

cover and turn on low

Cook 10-12 hours overnight

This feeds a large crowd and tasted good reheated a second time.

I chop up my bacon and cook it all at one time in a large sauce pot with a lid.
